Spinach Artichoke Soup

Hi Everyone!

I want to share a quick and easy soup that I threw together the other day while trying to figure out what to eat for lunch. 

I’ve had the ingredients to make Spinach Artichoke dip in my kitchen for about a month now. I’ve been fighting a cold/flu for a week so I thought, why not try a soup instead? Here is the easiest soup you could ever make, and it only took 15 minutes

Spinach Artichoke Soup


4 Garlic Cloves, chopped

1/4 White Onion, chopped

1/2 pack frozen spinach, thawed

1 can artichokes, chopped

4-8 Cups Vegetable Broth

olive oil

Grated Parmesan

**Italian Chicken Sausage


Start by sauteing the garlic in your stock pot, after about 1-2 minutes add in the onion. Cook until translucent (4-5 minutes) and then add artichokes and spinach. Season with salt and pepper and let the vegetables soak up the garlic and onion flavor. Next add 6-8 cups of chicken broth (really depends on how thick you want the soup to be, I used 8 and it was perfect). Let this simmer for a few minutes and its ready to serve. Sprinkle with Parmesan and enjoy!

** If you want to add some protein, heat up an Italian chicken sausage in the micro or in your grill pan. Chop up and throw into your soup.
